Chicken Broccoli Enchiladas

Ingredients

2 cups cooked chicken

9 oz. cooked broccoli

1 can cream of chicken soup, divided

½ cup sour cream

2 cups shredded cheddar cheese, divided

1 Tbsp diced onions

dash of salt and pepper

6-10 warm tortillas

¼ cup milk

Directions

Blend sour cream and 1/2 of the cream of chicken soup in a bowl until smooth.

Stir in chicken, broccoli, onion, salt, and pepper.

Fold in ½ of the cheese.

Put the filling down the middle of each tortilla.

Roll up and place seam side down in a greased 13x9 inch pan.

Mix remaining soup, cheese, and milk together.

Pour over tortillas.

Bake at 350° for 20 minutes until hot and bubbly.

Sunny Park Dairy is owned by Dean and Holly Frauhiger. In 1975 Dean began working the farm that has been in his family since the early 1900s. They operate their conventional 300 cow dairy along with their son, Krent, and his wife, Liz. Dean and Holly's daughter, Erin, and her husband, Joel Drayer, also work part time on the farm.


Together with eight full time and 13 part time employees, the Frauhigers raise Holsteins and a few Holstein/Jersey crosses. Holsteins are the most common breed of dairy cow—the black and white cows that are so commonly seen, although they also come in a red and white variety. Holsteins produce the most milk of any dairy breed. Jersey cows are a smaller breed of brown cows known for their high butterfat content. Heifers (baby girl calves) are raised by Sunny Park Dairy on various local farms. Most bull calves (the baby boys) are kept and raised for beef.


The family raises all of their own forages and some of their own corn, so their cows always have home-grown food to eat. Dean and Krent are both involved with their church.
